So the only way to see games desired and offering is to go through that forum, no way through the trade system itself? Like no way to get a list of a persons current trade offers up through the trade system itself?

I'm not 100% on this so anyone feel free to correct me:

But I get the impression the trade system was not made with the idea of mass trading with lists in mind; it feels more like it was designed for one-to-one game trades, but that's not what most people end up utilising it for (although many members just create upwards of 20+ trades en masse, which is rather inefficient for both the trader and offerer)

As it stands, you can either (depending on what they put in their description), try offering random games you own that they do not have (check via their Steam profile if not private), try finding a trade list they have up on the forums, or PM them directly to work out a deal. The issue being you can only list up to 3/4 games you want for 1 game in return when making a trade via the system.

Edit: and yeah, you can't filter for trades by a specific person

You can check the Steam wishlist of the trader by click on his username in their trade profile, for example in this post:
It will allow you to create trade profile on Indiegala. When you click on user name in trade profile IG you will be redirected to Steam profile. That is all. :)
Here is mine, you can try it: valike13
You get to valike13's trade profile, and in that page click on the username and it'll take you to the Steam profile where you can go to the wishlist, of course this won't help much for Steam profiles that are set to private.
There's also the "Requested games" section just below the "Offered Game" where the trader can set up to 3 or 4 games they want.

As for a list of games available for trade by each individual trader, yes the forum is the only way to check.

When a trade has been filled, does it disappear from the list?
If trade will be successful for you, it will remain in your library/trades/completed with Steam key for game and will disappear from IG trading page. In other cases it will disappear from your library and IG trading page (after specific time or closed trade with other user).

I was writing about IG library and IG trades page(s). From Steam library activated games do not disappear unless they are revoked (for example beta game keys by developer).
You can trade or make giveaways for games already in your Steam library if you have multiple keys.
