It seems doing further research just to find you a simple pre-written lazy answer (which didn't work out), since in America its just 'what is done', although some people opt for beef, ham, or chicken instead of turkey by preference...generally its taught to us as we grow up that we celebrate thanksgiving with a turkey dinner, its so common we don't question it until someone asks like you just did.

And it seems christmas dinner is based on some king richard preference, here we don't do turkey for christmas...that day we generally celebrate with family and its a mixed feast, probably more akin to the original thanksgiving.
