why are all the games so hard?

I tried several times and it's got me so amped up I have no desire to spend money at IndieGala store --ever--. It's probably possible to finish the challenges, but the ones I've gotten seemed so difficult that it felt worse than those obviously rigged carnival/fair games

Yup! The Feudalife challenges are not that easy, but it's time for me to put in my year of knowledge into this.
Tree: If you got a mouse that's easy to click, just spam clicks and listen to the hit audio. Once it's 15, move to the next tree. It's much harder to set up the rhythm compared to the mouse spam click because you see, there is a fast rhythm of hitting the tree with the axe and a slower rhythm. The fast rhythm is what you're aiming for.

Sickling: This is one of my worst ones. I suck at it, and all the advice I can give for it is to find a path where there are as many of those grass without flowers and aim for that path.

Rocks: Yes, mine the rocks and well, spam that button again. You're going to have an easier time getting the tempo by spamming mouse button clicks than trying to find the rhythm in my opinion.

Gardening: This is probably one of my best ones because it requires actual skill. So what you want to do is water the plant left and right 4 times and then go down to the next one. Even more, you need to time the animations perfectly so you can do near frame-perfect turns and water. That's the secret to this challenge. It's a high skill ceiling but it's completely doable. This is one of the challenges you can do even with a lower amount of time.

Archer Hunting: This one is not easy and requires some luck. But what you want to do is you want to get near an archer with a red ! mark within the slashing distance of your sword (the farther away, the better) and hit the archer. Then you move your character as soon as you hit the archer. If you're lucky, the arrow misses you, and after the arrow misses you, you chase the archer down and kill him. Now, if you are fighting an archer that doesn't have the ! mark on it (say the archer just spawned from the openings and you are near it), just go and chase after him and slash him to death. Good luck! You need the archers to spawn at good locations AND you need to be lucky enough that the arrows miss you (which with the strategy I have given you, a lot of times, they do miss you)

Sapling: For this one, you not only want to pick up the brown roots (not the black ones) but also pick them up in groups. I'd suggest picking these saplings up like a square box of 4. In fact, the best strategy for sapling is to pick up brown roots through area. If you pick up a brown root, look for brown roots that requires you to just turn your facing direction and pick those up. DO not pick them up 1 by 1 in a line. It's too slow. Pick them up in groups.

Hoeing: Look for groups of the brown plot and start from there. You want to lightly press the direction keys and find a rhythm between your movement and the clicking of the mouse button. For me, it's direction button, mouse click, direction button, mouse click in a rhythm. By the way, if you can go in a group instead of a line, go for it. However, lines are actually easier to do than a group, but groups are faster than a line when done correctly because you can save a tiny bit of time by doing near frame perfect turns and doing the mouse click.

Finally, computer requirements are important! You will need a decently fast computer to do these challenges without too much lag. Any standard gaming laptop should be enough (and by gaming laptop, I mean those laptops with a Nvidia/AMD dedicated graphics card, not integrated graphics). A gaming mouse is also extremely helpful. My favorite one so far is to use an Alienware Gaming Mouse. Note that my hands are not that big so this one is great for me. Your hands might be bigger so you might need a different mouse. But yeah, that's about all the advice I can give you. Good luck!
